Below is a list of tools and materials that you need for the Buttercream, Royal Icing, Gumpaste and Fondant class. No baking involved. For beginning bakers, you have an option to enroll in the cupcake baking class (same batter for cakes).
Buttercream Piping and Decorating Class
--learn how to decorate cupcakes and cake with basic piping, writing, roses, drop flowers, borders
REQUIREMENTS FOR CAKE DECO WITH BUTTERCREAM CLASS:
-6 pcs flat sugar cookies*
-6 pcs of cupcakes, any flavor
-2 10-inch piping bags, plus extra
-piping parchment papers for making icing cones
-icing couplers
-icing tips
tip numbers: 2, 3, 4, 8 and 12 16 and 18, 104 and 102, 129 and 2D, 67, 352 or any leaf tips
You may bring your own old icing tips or nozzles but the ones above will be used in the class.
-small containers to mix your icing
-paper towels, damp kitchen towel
-icing colors
-spatula, small (straight and angled if you have)
-containers for your project
-1 cup shortening
-2 lbs of confectioner's sugar

ROYAL ICING CLASS
learn how to make Roses, Daisies, Violets etc.,
--create filigree designs as well as run outs, lace patterns, brush embroidery, basic piping and extension works or bridge (second day if you choose an extra day)
--learn how to make the correct royal icing consistency, something i never would have learned had i not enrolled in a 5 day whole day class in Golda's Kitchen in Ontario, this is very important if you want to really succeed in creating beautiful royal icing designs in your cakes
-decorate cupcakes with Royal Icing

-egg whites
-icing nails, 7 (you need this so you can pipe the flowers) and a smaller nail (optional)
-icing squares, made of waxed paper, 1 1/2 by 1 1/2 inch, about 30 pieces, plus a roll of wax paper
-damp kitchen towel, paper towels
-containers for your icing, and icing colors
-toothpick, pins, scissors, small spatula
-icing tips, numbers 0, 1 ,2 3, 12, 16, 18, 67, 2D, 103, 104, 233, and any icing tips you already have
-6 flat cookies and 6 cupcakes
GUMPASTE AND FONDANT (2 days)
--learn how to make gumpaste flowers, cover cupcakes and cakes with fondant, plus how to make your own fondant and gumpaste
--create Wilton style Calla Lily, Roses, Carnation, Daisy, Mums
-learn how to create flowers using cutters and even without cutters, just shape them using your fingers
--assemble a 3 layered cake* optional, decorate with gumpaste for your final project
* if you plan to make a cake for someone, you can make your cake in class
--learn how to incorporate ROYAL ICING piping with gumpaste designs to finish your cake, Royal Icing class is prerequisite to this class, you should be able to know how to make Royal Icing because you need it to attach flowers on the second day using Royal Icing.
REQUIREMENTS FOR GUMPASTE CLASS
I will provide the class with the ingredients.
What you need to make your own fondant and gumpaste:
Icing sugar
-powdered gelatine, glucose, gum tragacanth or tylose, glycerine*** ( for your fondant and gumpaste)* Sweetcrafts at Boni Avenue tel. number 5321595/5326289 or go to Chocolate Lover in P. Tuazon, Cubao.
-bring cupcakes on the first day to decorate, and a cake, at least 3 layers on the second day, including extra fondant to cover the cake
-flowers made on the first day will be left in class to dry, to be attached on the second day
*a student of mine told me that gumpaste tools are available in Divisoria and Quiapo at a very cheap price so feel free to bring your own tools if you want
Ingredients for making the gumpaste and fondant is essential, you need this so you can make your own because it is very expensive to buy pre made gumpaste and fondant. Please bring the ingredients to class, the tools and kits are optional if you cannot find them in your area. However, if you really intend to master this craft, it would be an advantage to try and scour the stores and shops for these tools as they will be invaluable in your learning process. You do not have to buy them all at once, save for them bit by bit as you go along.
-Wilton Gumpaste and Fondant Kit or
-Rose, Calla Lily, Daisy, Cutters *these are items from the Wilton Gumpaste Kit
-gumpaste tool set* ( the ball tool and the dog bone are the two most important in this set, try having them at least in your decorating caddy)
-thick and thin fondant shaping foam, this is where you put the cut flowers, for shaping and forming, go to your groceries and find some plain sturdy foams, not the soft kind if you have no access to the WILTON BRAND FOAM.
-decorator brush, small angled spatula, Round cutters*
-fondant mat, or plastic mats, place mats that are clean, plus thin smooth plastic chopping board for your work place
-fondant rolling pin an 8-9 inch will do, fondant rolling pins are the plastic kind, because they most likely stick less but any rolling pin will do
-pizza wheel, ruler, toothpicks, icing colors
-damp kitchen towel, paper towels
-clean old stocking, preferably unused and white, small plastic sieve or sifter
-containers for projects, box for flowers, cling wrap and ziploc bags
Gourdo's sell these kits, also the courses are held in their stores but it is so expensive, you will basically be doing what the manual says and these manuals can be ordered in the internet for $4-5.00 only. I took the Wilton classes and the teachers pretty much read on from the manuals which was also given to us. I incorporate not only the Wilton lessons but just about everything there is to know from a beginner's standpoint.
